Cardamom Shortbread
Ingredients
-
2 cups all-purpose flour
-
1/2 cup granulated sugar
-
1/2 teaspoon fine sea salt
-
1 teaspoon ground cardamom
-
1 cup cold unsalted butter, cubed
-
1 teaspoon vanilla extract
-
2 tablespoons coarse sugar, for sprinkling
Directions
- Preheat the oven to 325F. Line two baking sheets with parchment.
- In a food processor, pulse the flour, sugar, salt, and cardamom to combine. Add the butter and vanilla and pulse until the mixture just comes together in clumps. Do not overmix.
- Turn out onto a lightly floured surface and press into a disc. Roll to 1/2-inch thickness and cut into 2-inch rounds. Transfer to the baking sheets, spacing them an inch apart, and sprinkle with coarse sugar.
- Bake for 18 to 20 minutes, until pale golden at the edges. Cool on the sheet for 5 minutes before transferring to a rack to cool completely.
